Butter & chocolate little bear cookies
Because we are all spending a lot of time at home right now, here is a short recipe to share with the family, for a lot of fun little homemade snacks!
1 3/4 cup (250 g) cup all-purpose flour
2/3 cup (75 g) icing sugar
1/4 cup (25 g) almond powder
2/3 cup (150 g) butter, at room temperature
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/3 cup (50 g) Chocolate (to decorate)
In a bowl, combine the almond powder, the flour and the salt. Set aside.
Using a hand mixer, beat the butter and the sugar together.
Add the egg and mix well.
Mix well, and shape the dough into a ball.
Cover with plastic wrap and refrigerate for 2 hours.
Preheat the oven to 350˚F (180°C).
Line a baking sheet with parchment paper. Set aside.
On a floured work surface, roll out the dough until it’s 1/2- thick. Then, cut out the cookies into little bear shapes.
Place the cookies on a baking sheet and bake for 20 minutes. Let cool completely on a rack.
Melt the chocolate and decorate the cookies with it. Let cool.
